For all the pasta aficionados out there, this spring season holds an opportunity to refresh your palates with bright, fresh tastes leveraging seasonal produce such as peas, artichokes, asparagus, and ramps. Let’s start from the heart of it all, Pasta Primavera. Here, we're providing you with two alternative recipes: a classic version and one for vegan enthusiasts.

Innovative chefs, such as Cassie Piuma, are transforming traditional spaghetti by adding a spring touch. Her particular creation involves fresh gnocchi with a sprinkle of sugar snap peas, red pepper and dill, served atop lemony, garlic-infused strained yogurt.

Enigmatic wild onions, or ramps, that are only available during the spring give another pasta variant a garlicky twist. If these aren't within reach, chef Justin Smillie suggests using elephant garlic or scallions as an alternative.

Speaking of impactful flavors, Justin Chapple takes traditional puttanesca sauce to another level by combining it with parsley, fresh spring onions, spicy Calabrian chiles, and olives, resulting in a particularly vibrant dish.
