Revamping Classic Congee: A Nourishing Comfort Soup Recipe

Congee, or jook as it's known in Cantonese, is a subtly flavored rice porridge that finds a special place on breakfast and dim sum tables. Traditionally, the flavor profile of this hot, comforting dish is kept as minimalistic as possible, but we've chosen to elevate it by introducing garlic and ginger roasted to a delicious char, fresh scallions, and a touch of cilantro. A co-mingling of chicken thighs and drumsticks adds a robust depth, creating a soup that's equally satisfying at breakfast or dinner.
One thing to appreciate about this dish is its flexibility - it doesn't have to strictly be rice porridge. Akin to risotto, congee is a specific type of porridge that's savory and quite filling. Chicken, vegetables, and even seafood, can be easily added within its versatile framework to create a hearty meal. Across Asia, it's most often enjoyed as an energizing breakfast, a side dish, or simply as a soothing remedy to settle an upset stomach. It's also common to find variations of this dish made with different grains like millet, sorghum, and barley, particularly in certain regions of Asia.
Take note: if finding fresh turmeric turns into a culinary adventure of its own, simply replace it with a teaspoon of dried ground turmeric.
The preparation is equally flexible, allowing you to prepare ahead by refrigerating the congee for three days or freeze for up to half a year. Turmeric oil can also be prepared in advance and stored in an airtight container in the refrigerator for two weeks.
The recipe starts with roasting unpeeled garlic and ginger in the oven until a charred layer forms. While the oven does its magic, scallions and cilantro stems are bound together and kept aside for cooking with the broth-bouillon base. Chicken, rice, the herb bundle, and the charred ginger-garlic are added to the pot while turmeric and chilies simmer over medium heat. Once cooled, the chicken is shredded and stirred back into the congee, while discarding the skin, bones, and the bundle of herbs.
The flavorful soup is garnished with freshly sliced scallions, sprinkled chopped cilantro leaves, and a squeeze of lime. A drizzle of the reserved turmeric oil before serving ensures every mouthful is a testament to comfort food at its finest. Enjoy it hot.
