With the holiday season in full swing, your agenda is likely filled with many festive gatherings. And these gatherings often feature a variety of tasty baked goods, whether homemade, gifted, or exchanged. Maintaining the freshness of cookies, cakes, and other festive treats is crucial for prolonging their savory delight. Hence, renowned pastry chefs share invaluable advice.
Keiry Palma, a chef-instructor of Pastry & Baking Arts at the Institute of Culinary Education’s New York City campus, emphasizes that the method of preserving baked goods depends largely on their type. Cakes and cupcakes, she suggests, are best consumed within a two to three-day period for ideal flavor but can be stored longer at room temperature in an air-tight container if they're dairy-free.
Items like cookies, brownies, and bars have a slightly longer fresh life, enduring for about a week, although Palma recommends enjoying them in the initial couple of days. Pastry chef Adriano Zumbo adds that bread and croissants are best relished fresh as they change over time.
If your treats include dairy-based fillings or frostings like whipped cream or buttercream, both chefs recommend refrigeration in an air-tight container to ensure top quality and food safety, despite a slight texture change. Eunji Lee, the founder of Patisserie Lysée and one of Food & Wine’s Best New Chefs 2023, affirms this, suggesting room-temperature indulgence even for refrigerated baked goods.
For bread specifically, Lodge Bread founder Or Amsalam recommends freezing as the optimal preservation method. Slicing the loaf and storing it in a large zip-top bag in the freezer allows for convenient, single-slice warming as required.
Palma further commends freezing for extended storage of baked goods if they're individually wrapped in plastic wrap or parchment paper before being kept in an air-tight container. However, she does caution against freezing cream pies.
Zumbo underlines that air and humidity exposure hastens staling and deterioration of baked goods, an effect compounded by weather and room conditions. Properly wrapping and containing baked goods can help to somewhat retain their texture and lifespan. However, Palma asserts that plastic wrap isn't a long-term solution as it can cause sogginess by trapping moisture.
To revitalize your loaf cakes, Amsalam suggests allowing them to defrost at room temperature to maintain texture and quality. These can then be sliced and topped as preferred. Amsterdam also recommends making a large batch of cookie dough, baking a portion, and freezing or refrigerating the rest for fresh cookies as needed.
Finally, Palma suggests allowing baked goods to thaw naturally before serving for a consistent texture and quality. To recreate the just-out-of-the-oven feel, warm them up slightly before serving.
